Freddy’s Heartwarming Holiday Molasses Cookies

Freddy's Molasses Cookie ImageHi, it’s Jason your resident Elk City 911 Dispatcher. At the 911 call center, we had a visitor recently stop by. He dropped off some goodies for our upcoming Thanksgiving day on duty protecting the people of Elk City. It was Freddy, Station U’s very own 5-star zombie chef.

I was floored at his generosity. All he said to me was a thank you for sharing the stories of the great paramedics at Station U and backing them up with support over the radio. The cookies are delicious and I there were plenty for all those in the coming holiday shifts.

That’s what I like the most about the Unusual population, you know, the mythical creatures that inhabit our city alongside their human neighbors. Though most go through their days unseen and unknown to the humans around them, they still take the time to do good things for their community.

Freddy even gave us the recipe and said it was easy to make our own at home any time we want to. Here it is for you to use, too. Happy Thanksgiving from all the first responders in Elk City, especially the Station U team here at the call center and the excellent paramedics out in the field.

Heartwarming Molasses Spice Cookies

Ingredients:

  • 3 sticks of room temperature butter (unsalted) (1 1/2 cups)
  • 1 cup packed light brown sugar (dark is fine, too)
  • 1 cup granulated sugar
  • 1/2 cup molasses (unsulphured)
  • 2 large room temperature eggs
  • 4 1/2 cups flour
  • 4 tsp baking soda
  • 1 Tbsp ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp salt

Preparation:

  1. Cream the butter, sugar, molasses until creamy and whipped (about 2 minutes).
  2. Sift together in a large bowl flour, baking soda, spices, and salt.
  3. Add dry ingredients to wet a little at a time until incorporated.
  4. (if you’re a zombie, check now for missing digits or other missing parts)
  5. Chill dough in refrigerator for at least 2 hours
  6. Preheat oven to 350 degrees F
  7. Roll chilled dough into 1 inch balls
  8. Fill bowl with additional 1/2 cup of granulated sugar
  9. Roll balls in sugar until covered and place on parchment-lined baking sheet
  10. Bake for 8-10 minutes until cookies show cracks on top. Don’t worry, it’s normal. They’ll crack more as they cool.
  11. Place baked cookies on rack to cool (or do what I do and eat some warm with cold milk)
  12. Seal cooled cookies in plastic container or zipper bag for later use
