Freddy, the zombie chef in the Extreme Medical Services series, sent me this great recipe for pumpkin muffins he makes for the Station U crews on the Thanksgiving and Christmas holiday shifts.
He says it’s the perfect bite in mini-muffin size and great for a crew on-the-go. Check out the recipe below and enjoy. (he reminds you to check the batter for missing fingers before baking
FREDDY’S MINI PUMPKIN MUFFINS (adapted from a recipe by Grace United Methodist Nursery School, Aberdeen, Maryland)
- 1/3 cup oil
- 1/3 cup water
- 1 1/3 cup sugar
- 2 eggs
- 1 cup canned pumpkin
- 1 1/3 cup all-purpose flour
- 3/4 tsp salt
- 1/4 tsp baking powder
- 1 tsp baking soda
- 1 tsp pumpkin pie spice
Mix thoroughly until the batter is smooth. Bake at 325 degrees F. for 25-30 minutes (until a toothpick comes out clean). This is for mini-muffins. Standard muffin size or loaf pan size will take longer. Use mini cupcake liners to create the perfect on-the-go bite for your favorite paramedics and first responders.
I’ve got a scull shaped muffin pan that will be perfect for this! Now to hunker down and make them.
